Quick Pickled Veggies
We love having these quick pickled veggies on hand as they really compliment a lot of meals.

I love the tang of a pickled veggie, but sometimes I think of adding them to our meals only a couple hours beforehand so I don’t have a lot of time to let them actually pickle. I came up with the easiest quick pickle recipe that does the trick for those tangy additions!
We usually pickle cucumbers and onions, but we have done carrots before too! We add them on top of all different things: salads, burgers, sandwiches, tacos, stir fry, rice bowls, etc.
INGREDIENTS:
1/2 seedless cucumber
1 small red or white onion
1/2 cup white vinegar
1 tsp salt
1 cup of warm water
2 tbsp white sugar
DIRECTIONS:
Peel the cucumber and slice it into thin rounds
Cut the onion into thin slices lengthwise
Add the cucumber and onions to a mason jar
Pour in the white vinegar and salt
In a separate bowl, whisk the warm water and sugar together until it’s all combined
Pour the water and sugar mixture over the veggies in the mason jar
Stir everything together to make sure it’s all mixed well
Store in the refrigerator for at least 30 mins
ENJOY!
We usually use them up within a couple days after making them. The pickle taste gets stronger the longer they sit.
These pickled veggies are so yummy. I love having them on hand because they really finish off a meal!
