Lemon Pound Cake
This Lemon Pound Cake is seriously the best!
Today is John Paul's birthday!! Unlike me, he is not a huge fan of sweets, however there is one dessert that he cannot resist!
His Mom's recipe for Lemon Pound Cake is truly heavenly!
INGREDIENTS
CAKE
2 1/2 cups all purpose flour
1 1/2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup orange juice
3/4 cup vegetable oil
2 teaspoons vanilla extract
4 eggs
zest of 2 lemons (optional, but SO yummy!)
ICING
1 1/2 cups powdered sugar
1/2 cup fresh lemon juice
DIRECTIONS:
1. Preheat oven to 325 degrees F.
2. Grease the bottom & sides of a bundt pan thoroughly with butter & then dust with a little flour
3. Combine all the cake ingredients in a large mixing bowl. You can use a mix master or a hand mixer. Blend on a low speed until the ingredients are mixed together (about 1 minute). Beat for another 3 minutes on medium speed until all ingredients are combined.
4. Pour batter into the greased pan & bake at 325 degrees F for 40-50 minutes or until a toothpick inserted in the center comes out clean. I baked mine for 45 minutes & it was perfect. Your entire house will smell DIVINE!
5. While the cake is baking, combine all the icing ingredients in a small bowl & whisk until completely combined. It may seem like a lot of lemon juice, but this is a Lemon Pound Cake so this is really where the lemon comes into play!
6. When the cake is done, take it out of the oven & poke small holes all around the cake about an inch apart. This is the hard part: resisting eating it all right away LOL
7. Pour half of the icing all over the bottom of the hot cake, making sure that each hole is filled up with the icing.
8. Wait about 10 minutes & flip the cake over onto your serving platter. Pour the remainder of the icing over the top of the cake.
9. EAT, ENJOY, & SAVOR!!!!
I serve it with berries & homemade whipped cream, but ice cream would be good too or just plain is perfection as well!
This cake will change your life, seriously!! It's so easy & so yummy! Definitely a fun treat for special occasions or in my case, whenever you want a little sweet pick me up ;)
