Italian Ricotta Cookies

During the Holidays, I love baking as it reminds me of my childhood and all the yummy cookies I would bake with my Grammy, like these Italian Ricotta Cookies.

These Italian Ricotta Cookies were a recipe from my Great Great Aunt and I always loved when she made them!
This Holiday season, I want to create some new traditions with Dominic. I decided we would bake some Italian Ricotta cookies that are a family recipe and then gift them to the postal workers who are at our house almost daily delivering packages and mail.
I want to instill in Dominic that giving to others is so important all year long, but especially during the holidays. The holiday season can get so busy, but we have to remember to slow down and thank others around us.
After we baked the Italian ricotta cookies, we packaged them up in these festive Rubbermaid® TakeAlongs® so that we could easily give them to our postal workers. We chose to use the red and gold TakeAlongs®, but there are also green TakeAlongs®.
TakeAlongs® come in a variety of sizes so they can fit all different treats in them. We chose the round and square versions and the Italian Ricotta Cookies fit perfectly!
We then stacked up several TakeAlongs® containers outside on our porch, next to this cute sign that I created so the postal workers know to take some cookies! This is a free printable, so you can create a little giving station for your postal workers too! PRINT THE SIGN BY CLICKING HERE.
ITALIAN RICOTTA COOKIES RECIPE:
COOKIES:
1 LB Ricotta Cheese
2 tsp vanilla (I used almond because that is what my Great Great Aunt used)
4 cups flour
2 eggs
1/2 cup sugar
1/2 lb margarine, softened
1 tsp Baking Powder
1 tsp Baking Soda
FROSTING:
1/2 cup powdered sugar
5-6 tsp milk
1/2 tsp vanilla (I used almond again)
DIRECTIONS:
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
2. In a mixer, cream the margarine and sugar until fully combined and smooth
3. Add eggs, one at a time and beat until all combined
4. Add ricotta and vanilla and beat for 1 minute by hand
5. Mix together the flour, baking powder, and baking soda in a separate bowl
6. Add the flour mixture to the wet ingredients and combine
7. Drop the dough by the spoonful onto the cookie sheet (the dough will be heavy)
8. Bake 12-15 minutes until the cookies are slightly golden and cooked through
9. Whisk the frosting ingredients all together
10. Allow cookies to cool and drizzle with the frosting
11. ENJOY!
Dominic helped me to bake these Italian Ricotta cookies so my little baking assistant got to test some after!

There is just something about the Holidays that makes giving to others extra special and I am so glad I started this tradition with Dominic this year.
