Easy Crockpot Beef Stew

This easy crockpot beef stew is a family favorite!

There is nothing like a big bowl of beef stew that’s been made in the crockpot during the chilly fall season.

We love this crockpot beef stew recipe! It’s actually by not only myself and John Paul, but the kids too which is a huge plus!

This is super easy to make and you can make it in the morning and have it ready by dinner time! It’s a perfect fall meal that is so comforting!

CROCKPOT BEEF STEW

We love making this beef stew in the crockpot because we don’t have to worry about it after we prep everything. It’s super filling and feeds a crowd!

You can also substitute for some of your family’s favorite ingredients, but this is how we love to make it!

This is a bit different in that we use sweet potatoes and wine which gives it a bit of an elevated flavor! It’s DELISH!

INGREDIENTS:

  • 2 lbs beef stew meat

  • 1 small can tomato paste

  • 1/4 cup dry red wine

  • 3 cups beef broth

  • 1 medium white onion, diced

  • 3-4 carrots, peeled and diced

  • 3-4 celery stalks, sliced

  • 2 sweet potatoes, peeled and chopped

  • 3-5 tbsp flour

  • 2 bay leaves

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp dried thyme or rosemary

  • salt and pepper to taste

DIRECTIONS:

  1. Place beef stew meat in a bowl or large bag and add 3 tbsp of flour, toss to coat evenly

  2. In a large skillet, add 1 tsp of olive oil and brown the meat until just brown on each side (about 4-5 mins)

    • Make sure it’s all on 1 layer, do it in 2 batches, if needed

  3. Once browned, remove from the pan, add the chopped onions and cook until until slightly translucent

  4. Add the wine to the pan with the onions and cook for about 2 minutes, scraping up any bits from the bottom of the pan

  5. Transfer the onions and wine mixture along with the browned meat to a crockpot

  6. Add the spices, chopped carrots, celery, sweet potatoes, beef broth, and the can of tomato paste

  7. Stir to combine everything

  8. Set the crockpot for 8 hours on low or 4 hours on high

    • We check on our beef stew every few hours and if it seems too thin, you can take 1 tbsp of the broth out and mix with 1 tbsp of flour to create a paste. Add the paste back to the crock pot and stir to combine. This will help to thicken it. Start with 1 tbsp and you can go up from there. Key is to do a 1 to 1 ratio when making this paste!

  9. ENJOY!

Best part about a beef stew is you can really add anything you like to it! If you like peas, add them! If you like mushrooms, add them! You can also season it in a variety of ways too! This is how we enjoy it and the wine and sweet potatoes give it such a yummy flavor! I also love the tomato paste for a bit of a tomato flavor and it helps to thicken the stew.
