Dairy Free Mashed Cauliflower
This mashed cauliflower is so creamy and it’s dairy free!

We have been trying to eat more paleo meals and reducing our dairy intake. We decided to try our hand at mashed cauliflower and now we make this a few times a month, it is SO good.
If you love mashed potatoes, you will love these! They have a similar texture and get so smooth and creamy. We make this recipe dairy free, but it does not skimp any flavor!
Sometimes cauliflower can be kind of bland, but this recipe is packed with simple seasonings that gives it such a delicious flavor. Even the kids love it, which is amazing!
INGREDIENTS:
1 head of cauliflower cut into small pieces
1 1/2 tbsp minced garlic
2 tbsp ghee
salt and pepper to taste
DIRECTIONS:
Cut the cauliflower into small pieces—it doesn’t have to be bite size, but large chunks won’t boil as fast
Boil a pot of water and add the cauliflower when the water is boiling
Boil the cauliflower until it’s fork tender (about 10 mins, depending on the size of your pieces)
Place the boiled cauliflower into a food processor and add the ghee, minced garlic, salt and pepper
Pulse slowly to start breaking down the pieces then pulse faster to make it all smooth (you can decide how much you want it blended, we like ours very smooth without chunks of cauliflower in it)
Taste and check the seasonings, add more salt/pepper or ghee if you would like
ENJOY!
The ghee adds SO much flavor. If you have never had ghee before, it is clarified butter so it has the lactose removed making it dairy free. It smells and tastes like movie theater butter. It’s AMAZING! It’s so perfect in this mashed cauliflower because it makes it creamy without adding any milk, cream, or cheese.
We love making this when we have a meal that has a ‘sauce’ so that it can be scooped up with the mashed cauliflower. We made it with roasted asparagus and salmon that was topped with a lemon, wine sauce and it was incredible. I am dreaming of it now as I write this, LOL!
