The great thing about this dip is you can easily double it, which makes it perfect for a party!
My Mother in Law makes this dip for tons of parties throughout the year, however the colors make it perfect for Christmas time!
INGREDIENTS
6 pieces of cooked bacon
1/2 green pepper, chopped
2 cans of clams, drained, but save the juice
1 small jar of pimentos, chopped
1/2 cup of grated parmesan cheese
1/2 cup of bread crumbs
1 tsp hot sauce
DIRECTIONS
Preheat the oven to 350 and grease a shallow dish
Cook bacon until crisp and crumble
Chop the green pepper and saute until soft, but not mushy (6-8 mins)
When the pepper is done, allow it to cool
In a large bowl, combine the crumbled bacon, sauteed pepper, chopped pimentos, clams, parmesan cheese, bread crumbs, and hot sauce
Add more hot sauce, if you want it spicier
The mixture should be combined well, but if it seems to dry, add some of the reserved clam juice—you don’t want it too wet though
Add the mixture to the greased dish
Bake for 30-35 minutes and the top is slightly crisp
Serve with crackers
It’s best served hot as all the flavors really come together!
This dip is very easy, but looks like it took a long time to make. I made it for the first time over the weekend and I was surprised at how simple it was to put together!
